We wrote our ingredient rules before we cooked our first meal. They don’t change based on the day or the dish.
No refined flour. Ever.
Every bread is whole wheat or millet. No maida — refined flour — in any dish. Not in the roti, not in the base, not hidden anywhere.
Cold-pressed oil and ghee only.
We cook with cold-pressed mustard, coconut, or sesame oil depending on the dish, and pure desi ghee. No refined vegetable oil.
Whole spices. Ground fresh.
Every masala is made from whole spices in our kitchen. No packet masalas, no MSG, no flavour enhancers.
No refined sugar.
We sweeten only with jaggery or dates. Nothing that causes a blood sugar spike an hour after you eat.
